Add pipeline completion report

Using snakemake report tool, include:

1. A fastp report by processing the fastp.json individual reports.
2. A mapping report by processing the mapping_summary.tsv file. Creating a barplot for the uniquely mapping reads, etc.
3. Making a PCA figure from the scaled_counts.tsv count file.
