Add container to docker-compose.yml borrowing from one of these:

• kartoza/docker-pg-backup: A cron job that will back up databases running in a docker postgres container
• Docker Postgres Backup/Restore Guide (with examples)

Save backups to /share on the VM instance and setup /share as a separate mounted volume with snapshots taken daily.

Hold the phone -- we got backups as of today (2024-03-12):
