Needs instructions on editing HealthKit Data Types to Collect

Cardinal v2 no longer reads HealthKit data types to collect from CKConfiguration.plist. Need to update the documentation to reflect that HealthKit data types need to be set in CardinalKit/CardinalKit-Example/Library/HealthKit/CKHealthKitManager.swift
