Investigate updating ComsosDB SDK Version

We are currently using the Azure Functions CosmosDB Extensions (v3.0.10) which uses a deprecated version of the CosmosDB SDK (https://www.nuget.org/packages/Microsoft.Azure.DocumentDB.Core/).

Investigate updating this to a new version of the SDK.
