EPIC: Fix sync for mtuchi

Mutchi is encountering a number of blockers using new sync stuff and sandboxes in real projects:

• ensure github sync works with new projects (basically make deploy work with v2 project) GH sync won't work with v2 project files #1185
• make credentials work in workflow.yaml (ie, some kind of mapping or local override) - maybe via CLI: Credential store #210
• make collections work in workflow.yaml (ie, native cli support for collections) Collections: better support for executing workflows #841
• make edge conditions work in workflow.yaml (ie, support the lightning special strings natively) Sync: edge conditions don't natively sync to the runtime #1123
• maybe separate workspace and project stuff in openfn.yaml (not tracked) Handling openfn.yaml in git merges #1187
• execute workflows direct from project.yaml CLI: support execute from project.yaml #621

All these issues are tracked somewhere

better deploy --beta and aliasing are also gonna be super helpful, but I'm not attaching those directly to the epic
