Update README examples with post-merge networks (Ropsten, Rinkeby, Kovan being deprecated) #370

Ropsten, Rinkeby, Kovan, etc. test networks are being deprecated later this year.
Would be great to update README example code snippets to use Mumbai or some other post-Merge, Aave-supported test network.
