Update {gt} helper functions #2
Description
rstudio/gt#858 outlines an issue with the as_raw_html() function which the output_table() function and its internal helpers provide a hacky workaround for (also connected tor rstudio/gt#816).
As and when there is an update to {gt} to account for these issues then deckhand's helper functions should also be updated.
