Inconsistency in CompositeResourceDefinition apiVersion for v2 docs

What's Wrong?

There seems to be an inconsistency with CompositeResourceDefinition apiVersion. Since apiVersion v1 is deprecated in crossplane v2, docs for v2 should point to apiextensions.crossplane.io/v2 everywhere except in migration docs.

For example, on page https://docs.crossplane.io/latest/composition/composite-resource-definitions/ it starts with v2 apiVersion and then shows v1 in rest of the YAMLs.

I am willing to work on this if mention of v1 was not intentional

@MuneebAijaz thanks for raising this issue and offering to fix it. That indeed seems like an oversight in the documentation. This is further confirmed by these docs: https://docs.crossplane.io/latest/whats-new/#namespaced-composite-resources

We'd appreciate a PR to update the docs.
