feat: Recover/integrate or rewrite fork and reorg handling

We currently don't check for forks and there is no reorg handling. Even though it's unlikely to happen with chainlocks, we probably should have it integrated at some point. There was an unused implementation which be used as reference or can be recovered from:

• ChainState fiedls removal #289
• removed fork detector and fork structs #290
