[TASK] Add OpenSearch 3.x dependencies And create a new Client

Description

• We should be able to incorporate the libraries that provide the new client without breaking any existing functionality

• We should also be able to create a client reading all the pertinent connection params

Acceptance Criteria

• [] We should be able to connect our client to a secured instance using SSL, as well as a non-secured one
