I have winmerge installed, but it's not detected as a merge tool. Would you consider including support for it out of the box?

Sure! The easiest way to get it added is to send a PR with a DiffProgram (eg https://github.com/droyad/Assent/blob/master/src/Assent/Reporters/DiffPrograms/P4MergeDiffProgram.cs) and add it to the end of the array in https://github.com/droyad/Assent/blob/master/src/Assent/Reporters/DiffReporter.cs#L23
