I think we use any one 1 key not Mandatory use ANTHROPIC_API_KEY user can select model and update api key

you answered your own question. add some cli commands in the gateway to set your provider of choice if you dont wanna use it

In case different projects use different providers, models, and API keys, should we support per-project configuration instead of a global CLI setting?
That would allow each project/tenant to define its own provider and key.
