The description in services.md is good, but a few examples of what we consider to be a service (along with links to a good repo) would be helpful.

Also, is our preferred model one application per repo or one service per repo?

My preferred model is one service per repo. The Grid (https://github.com/guardian/grid) is a nice opens-source repo that fits my mental definition and uses that model. Most of the others I can immediately think of are not in open repos, which I'd prefer to reference from here to avoid apparently dead links.
