Accidentally changed open with

I accidentally changed the application to open litematic files and now cant change it back. It is not recognizing these files

Right click on a litematic -> Properties and change the application handling the file to the program you want to handle them.

I'm not sure what you are doing exactly with the files via the file manager? If you want to open and use the schematics using the mod, then these file manager associations are completely irrelevant. There is no way to open a schematic file in the mod by opening it via the file manager. Instead you just put the files in the schematics directory inside your game instance directory and then load them via the menus in the mod.

But if you want to look at or edit the files in an NBT editor, then first install an NBT editor such as NBTExplorer, and then you can change the file association like Sakura-Ryoko mentioned above. But even in that case you can also just open the NBT editor directly and then use its menus to open the schematic file. Although I guess usually it's easier and faster to double-click the file to open it in the editor.
