Describe versioning policy in documentation for all components

I made a PR to describe the versioning policy (as part of our internal documentation) for Open Zaak: open-zaak/open-zaak#2304, to make it a bit more concrete up until which version we support (do patch releases if clients request it).

Let's add the same documentation for the other components
