Hi, I have exactly the same laptop, the same specification, but during the installation the screen keeps jumping, I don't know what it's caused by.

you must do:

1. disable ssdt igpu via plist
2. follow this guide https://dortania.github.io/OpenCore-Install-Guide/config-laptop.plist/coffee-lake-plus.html#deviceproperties

Well, it doesn’t work (it reboot my pc half way through installation) tried with you EFI catalina 10.15.7
Can you help me out?!
