[Feature Request] Support PUID and GUID environment variables

Hi there,

First, thanks for this awesome job. I'm in the midst of testing Roon and I have to say that being able to spawn a Docker container for Roon Core in less than 2 minutes was a bliss!

I was wondering if supporting PUID/GUID environment variables would be something feasible to prevent Roon Core files to be written with root user.
