Dynamically update sidebar

Rather than hardcoding the sidebar in mkdocs.yml or sidebar.ts, we should have a more dynamic sidebar that just pulls from the content directly.

For P0, we'll use mkdocs.yml and after launch we'll update to a more dynamic sidebar.
