scikit-image is an image processing package for Python that is quite powerful but seems to have less "support" than scikit-learn. Some of the open skimage projects look fun, especially for anyone looking to bolster their image processing coding skills.

If you like integral functions (like "erf") then I have an old PR
sympy/sympy#11014
that needs some love. But its a bit of a deep dive... And there are multiple approaches; not sure which is The One True Way [tm].

That has a merge conflict---cleaning that up might be a nice, if somewhat boring, example for a future seminar...
