Cleanup: deactivated mentors data

Description

This PR cleans up data of deactivated mentors. Although not visible on our website and some others are not in our approved records anymore, their data should not still be public in this repo.

• Data count removed: 23

Also cleans up logic with counting deactivated mentors + fixes mentors count data currently incorrect on website (currently showing 68 instead of 61)

• should now be 60 because 1 mentors was cleaned up as their data was not in our current approved records
