Adds support for Cypress 15, which released on August 20th, 2025
I updated the default cypress to 15 inside the repo and dropped lts-2 from the workflow as node 18 isn't supported on Cypress 15. I also updated the node types from 14 to 22 and typescript from version 4 to version 5.
