`json2csv` was abandoned after v5. Replace it with `@json2csv`. Refs STCOM-1132

json2csvwas abandoned after v5. Replace it with@json2csv.Tests here are anemic compared to those in stripes-util; they should be updated here since that function is deprecated (STCOM-1134). IOW, See also folio-org/stripes-util#64 which provides better confidence that this will be a smooth upgrade.
**Difference from #1999: new deps are direct deps, not dev-deps. 🤦
