Add a new CI workflow that is compatible with / uses uv, to better reflect how snapAnalysis is intended to be installed and used.
Astropy needs extra setuptools dependencies for python>=2.13
Removed astropy from extra build dependencies, which attempted to fix build issues in python >= 3.13. The issue is documented here: #25 for the future.
Removed Python versions 3.13 and 3.14 from the workflow matrix. See #25 for to-do's related to this.
