Replaced the Bitnami Kafka image with confluentinc/cp-kafka:7.6.1 in both docker-compose files. Updated environment variables to match the new image's configuration requirements, including listener and replication settings.

I had some environmental troubles. After blowing my environment away and restarting LGTM.
I tested:
01-streaming-from-kafka
07-partitioning-while-streaming
11-stream-from-multiple-topics
I think @daveklein or @petermarshallio, you should verify that the automated tests written by @sergioferragut work on this branch (I couldn't tell from the PR if they are running/passing automatically)
