Update to latest and allow any v0.x versions. This allow `onfido-ruby` to be compatible with Ruby 4.0

@D-system Thanks for your contribution. I had to add an additional change to have this working, hence I have put everything here. I've also created onfido/onfido-openapi-spec#194 to persist the change after library re-generation. Hence current PR can be closed. |
