Any chance we can add 3.12 and 3.12 to the supported python versions first?

I am primarily looking for a tag which I can use as an anchor for a conda package.
The only other change in this PR are some small updates to the documentation.

There's a certain amount of overhead associated with doing a release (uploading to pypi, etc) so I'd rather ensure we do that python version bump before a release so we don't have to do another one soon.
