chore: bundle all vitest packages into "vitest"

Description

This PR bundles all @vitest dependencies (not peer dependencies) into the vitest package to improve the DX of the monorepo (running pnpm dev only on vitest or the peer dependency package that you work on instead of all packages)

It also removes tsconfig.paths to improve the module resolution logic (previously, even if the @vitest package wasn't in deps, it would be supported by TypeScript because paths are global)
